For most people in their twenties, a wild weekend requires an excessive amount of alcohol, loud music, and blurry memories.
For John and me, wild weekends include excessive amounts of food, regrettable calories, and going to bed at 9PM. WOOOOOT. We’re crazy. Total party animals. I know you’re dying to hang out with us!
Seriously though, our entire existence (only exaggerating slightly) revolves around food. For us, the best days equal really good burgers (AND fries), some kind of dessert, and maybe, if we’re feeling extra crazy an appetizer.
I mean, don’t get me wrong. We don’t drown ourselves in junk food every weekend. Actually, we eat healthy 90% of the time. But, if we had it our way, we’d be regulars at In-N-Out (pass the fries and pink lemonade, pleaaase).
BUT, for the weekends we do feel like getting crazy, these white chocolate chips blondies are ALWAYS a part of the wildness. I mean, how could they not be?! They’re incredibly buttery, wonderfully gooey, and loaded with white chocolate. Um, yes please!
White Chocolate Chip Blondies
These White Chocolate Chip Blondies are exploding with flavor. They are incredibly soft, packed with brown sugar, and loaded with chocolate chips! Their ooey-gooey texture combined with an extremely wonderful buttery taste makes these a new favorite in my house!
Ingredients
½ cup unsalted butter, melted
1 & 1/3 cup brown sugar, packed
2 large eggs, room temperature
2 teaspoons vanilla extract
1 & ¼ cup all-purpose flour
¼ teaspoon salt
1 cup + 2 tablespoons white chocolate chips, divided
Directions
-Preheat oven to 350°F. Line an 8×8 inch glass pan with parchment paper (or line with foil and spray generously – otherwise it will stick).
-Using an electric mixer, beat melted butter and brown sugar for two minutes on medium-high speed. Scrape down bowl as needed.
-Add eggs and vanilla extract on medium speed until just combined (do not overmix).
-Turn mixer down to low and slowly add in flour and salt. Once the mixture is almost fully incorporated, turn the mixer up to medium speed for 30 seconds.
-Using a rubber spatula, fold in 1 cup of white chocolate chips.
-Pour mixture into lined glass pan. Use rubber spatula to create an even layer. Then sprinkle on the remaining 2 tablespoons of white chocolate chips. Bake for 30-34 minutes or until toothpick comes out with only a few moist crumbs. I bake mine for exactly 32 minutes but all ovens are different so bake accordingly.
-Remove from the oven and let cool completely before serving.
