So, I know I have already talked about my overuse of the word, “favorite.” And my innate ability to be overly dramatic when on the subject of food. BUT, can we just get real for a second? This bean & corn salsa is by far the best dip in the world (notice how I didn’t use the “F” word?!).
Not only is it incredibly delicious but it is also incredibly fresh, healthy, AND easy. Yep, that definitely deserves FOUR THUMBS UP (I’m holding up Sarge’s paws too). Wait, do paws count?! Yes? Okay, good.
But, as much as I would LOVE to get credit for this recipe, I can’t. My mom (the biggest angel to ever exist) is the brains behind this operation (operation? Recipe?).. okay, my mom is the brains behind this recipe.
Actually, she started making it when I decided I was no longer going to eat meat. The hope was to introduce something into my diet other than cheese quesadillas. For some reason she thought that wasn’t an adequate diet. MOMS. *eye rolling*
Thankfully, I have now matured passed my unfortunate teenage diet (minus the occasional medium pizza consumed entirely on my own). And while cheese quesadillas will forever hold a piece of my heart, this dip holds an even bigger piece.
So, let’s pass the chips or a giant spoon and eat our weight in this amazing bean and corn salsa!

The Best Bean & Corn Salsa
This fresh, easy salsa can be eaten with chips, veggies, or a giant spoon! It is a definite crowd-pleaser and will have people begging you for the recipe!
Ingredients
2 cups sweet corn
1 (15 ounce) can pinto beans, rinsed & drained
1 (15 ounce) can black beans, rinsed & drained
1 green bell pepper, diced (or 2 jalapenos)
1 cup red onions, diced
1/3-1/2 cup cilantro, chopped
4-5 tablespoons fresh lime juice
1 teaspoon pepper, or to taste
1 teaspoon salt, or to taste
-In a large bowl, combine corn, beans, green bell pepper (or jalapenos), cilantro, lime juice, pepper, and salt. Mix until evenly combined. -Enjoy!Directions
-Green peppers and jalapenos both taste awesome in this dip! Use whichever you prefer! -I always use ½ cup cilantro when I make this salsa. However, cilantro isn’t for everyone, so adjust the amount according to your personal taste!
