30-Minute Italian Sausage & Spinach Gnocchi

“Well if I’m going to dry the dishes, I want drying credit”. John, here is your drying cred. You are now my official dish drier. Thank you for all your hard work, dedication, and impeccable drying abilities. You are undeniably the best drier the kitchen has ever seen. The pots thank you. The towels fear you. And I aspire to be you.


*major eye rolling* Okay, but seriously. I love him. A lot. There are very few people in my life that I feel so strongly about. He has been awesome. Really, I mean that.

BUT, like, can we just talk about his insane ability to forever be the messiest person I know? And you guys, this is saying a lot because I rival his messiness. My innate ability to spill on any and EVERY brand new white t-shirt is truly remarkable.

But, still. He is worse. Yesterday, we were eating chips and salsa (I love you, you amazingly-wonderful-salty snack) and he managed to not only spill out of one side of the bowl but also managed to spill out of the other AND all over the counter. Yep. That’s our life. We are two awesomely-awesome messy people.

And I wouldn’t have it any other way. I mean, isn’t the quote, “life is a little messy.” Wait, did I just make that up?


ANYWAY, let’s talk about food. This recipe is my take on an Italian dish using healthy ingredients and big, bold flavors. Plus, isn’t everything better when gnocchi is involved? Oh and did I mention this can be made in under 30 minutes? Thirty minutes, people! Italian Sausage & Spinach Gnocchi for the win!

So here’s to gnocchi, thirty-minute meals, oh and my favorite drier.

Italian Sausage & Spinach Gnocchi

An easy weeknight dinner that is packed with flavor and can be made in under 30 minutes!

Italian Sausage & Spinach Gnocchi


1 lb. ground Italian turkey sausage

2 (15 oz.) cans tomato sauce (I use Hunt’s)

½ large red onion, diced

3 garlic cloves, minced

2 teaspoons olive oil

1 teaspoon dried basil

1/2 teaspoon dried parsley

1/2 teaspoon dried oregano

1/2 teaspoon salt (or more to taste)

1/4 teaspoon onion powder (optional but preferred)

1/4 teaspoon pepper

1/4 teaspoon red pepper flakes

1 (16 oz.) package gnocchi

2 cups fresh spinach, packed (& roughly chopped)

Optional: ½ cup parmesan cheese


-Heat a large skillet with oil. Combine ground turkey, onions, and garlic. Sautee until turkey is no longer pink and onions become fragrant.

-Add tomato sauce, basil, parsley, oregano, salt, pepper, and red pepper flakes. Bring sauce to a boil then cover and turn down heat to low. Simmer for 10 minutes.

-While sauce is simmering, boil water in a medium sized saucepan. Add gnocchi and cook for 2-3 minutes or until gnocchi floats to the surface of the water. Drain and rinse, then add it to the turkey sauce mixture.

-Next add spinach and parmesan cheese and continue simmering for 1-2 additional minutes.
